DESCRIPTION:In the Basic Principles of Chocolate Making\, learn how to take cacao beans and transform them into delicious chocolate. In this hands-on class\, you will learn about sorting out bean imperfections\, roasting\, winnowing and then hand-grind your beans into chocolate that you can take home to enjoy (or enjoy on the spot). On the way\, you will also learn about the commercial processing and how different ingredients are added to various grades of chocolate. Together\, we will also learn to appreciate and taste chocolate to understand the characteristics of different chocolates. \nWhen?\nSaturday April 26th\, 11:00 AM- 1:30 PM (Island Mountain Arts Public Gallery – 2323 Pooley St\, Wells BC) – the workshop space is mobility accessible\, with a washroom down a flight of stairs) \nCost?\n$75.00 + GST – includes equipment access and set of ingredients.\nParticipants are allowed to come with one secondary participant per each set of ingredients. IMA will also have a small amount of PWYC seats – please indicate that as your choice in the payment section of the registration form. \nRegistration and Payment:\nRegister for our workshop by clicking here\n25% of the workshop fee will be due within 5 business days of registration and is non-refundable. IMA will draft and send an invoice to you via Square.\nWe can take down-payment in the gallery in cash\, via e-transfer to finance@imarts.com or using a credit card online.\nThe balance is due upon arrival at the workshop. \nThe Cocoaro Story:\nCocoaro Craft Chocolate began in Wells\, BC and was created by independent entrepreneur\, Margaret Inoue. The small town and supportive local food and business community in the Cariboo helped to incubate and grow Cocoaro from an idea to a business. In 2018\, Cocoaro moved to the lower mainland of BC as a result of family priorities. We have found a welcome food community and hope to grow the success of the chocolate and continue to educate people on fine craft chocolate. \nThe business grew out of Margaret’s passion for food\, flavour\, social justice and\, well\, chocolate. It was the intersection where she felt she could make a difference through the business she developed. She is continually learning and working on her craft. The business and bars also reflect her Japanese heritage\, including the gifting aspect of the culture. She hopes you not only enjoy them\, but you also share them\, which is why we make the bars beautiful on the outside and delicious on the inside. \nAll ages welcome. Following three fantastic sold-out events in Quesnel and Prince George\, we’re excited to offer a 4th opportunity to enjoy this special series this spring. \nTaste of Mexico: Cinco de Mayo is a unique food and beverage event featuring a six-part food tasting menu served with a three-part drink pairing (alcoholic and non-alcoholic options available). It’s a journey of flavour\, discovery\, and community\, and a celebration of food culture around the world. Our homage to Mexico holds a special place in our cook Jillian’s heart; think of it as her culinary love letter to a country she keeps coming back to. \nThe Menu:\n* Hors d’ouevre: ceviche in endive\n* Soup: pozole rojo\n* Appetizer: tostada con carne\n* Salad: esquites\n* Main: pork al pastor with rice and black bean mole\n* Dessert: tres leches cake \n*IMPORTANT* this is a set menu event.
